Nutrient rich offal from our grass feed steer & bull. We don't know which kidney is from which cow but it should not matter when it comes to a kidney as the flavor is already fairly unique. It can be prepared in a variety of ways. We have pureed in the food process and sautéed into some chili. It added some wonderful depth of flavor and made it extra nourishing.
