Brisket (bull)

This stew meat is from a grass-fed and grass-finished South Poll bull...a true grass & forage converting breed. Beef brisket is from the breast section between the foreshank and plate. It contains of layers of fat and lean meat, but no bones. Often cured in salt brine to make corned beef brisket, it is usually prepared by braising or by cooking in liquid. Or maybe you are a Pitmaster? These are delicious either way!

Our cows only eat grasses and forages and never receive any grains. Raised on pastures that are free of pesticides, herbicides, and synthetic fertilizers.
