These Osso Bucco, also known as Beef Shanks, are from our grass-fed & grass finished steer.* Beef shank cross cuts are cut from the hindshank or foreshank perpendicular to the bone. They are fairly thick, and are usually prepared by braising.
Our cows only eat grasses and forages and never receive any grains. Raised on pastures that are free of pesticides, herbicides, and synthetic fertilizers.
